I have been on creatine ever since I can remember.
I might have a few days where I stopped but pretty much everyday I take it.
What reasons do companies recommend customers to get off creatine for a period of time?

They usually say your natural creatine production drops off if you take it continuously although I have never seen any data that validates this. I guess its kinda like some of the herbal test boosters,it can screw with your natural biochemistry if you persist with it to long. Most of my clients on creatine cycle it 8 weeks on 3-4 weeks off.

You'll probably notice a slight drop off in strength but you could always add in maybe some beta-alanine if you can afford it and then cycle both together when you go back on the creatine.

I was talking to my Biology professor ,who happens to be the one who started our universities sports nutrition program, about the creatine affects if taken over long periods of time. She said it is unknown (like most studies I've read claim) as of yet. But she said it may be similar to taking vitamin C. She said if a person takes a vitamin pill for like 18years of their lifetime since their childhood, but then suddenly gets off of taking the vitamin, the person may become vitamin c deficient.

I seriously doubt it. The two are nothing alike but that being said, I would definitely cycle it at 6 weeks on and 4 weeks off.
