1 tsp. of Olive Oil,1 med. red onion ,diced,1 lb. chicken breast cubed, and skinned,1 can of black beans drained, 15oz.,2 med. tomatoes,diced,1/2 cup pepperoncini peppers ,chopped,3 Tbsp. of chopped parsley,2 Tbsp. of cider vinegar,1 Tbsp. of tabasco sauce,8 cups of Romaine Lettuce leaves,- Heat olive oil in non-stick skillet,Add in red onion and chicken cubes for about 5 minutes, or until not pink anymore.Remove from heat,let cool.Combine all ingredients ,except lettuce, in a large bowl and toss well.Place two cups of Romaine lettuce on plates, and pile on chicken mixture.Makes 4 servings.
