Salsa & Cheese Omelette :
5 egg whites 2 eggs ¼ cup salsa 4 slices reduced fat cheese ¼ cup chopped mushrooms(optional) 1 tbsp chopped green chiles(optional) Salsa & sour cream for garnish(optional) salt & pepper nonstick cooking spray
Whisk the eggs, egg whites, salt & pepper till light.
Heat an omelet pan, and spray with cooking spray. Pour in half the egg mixture and cook till nearly done. Sprinkle half the cheese, salsa, mushrooms and chiles over half the omelet.
Fold over, and cook for 1 to 2 minutes. Remove into a warm plate, garnish with salsa and sour cream and serve immediately. Similarly prepare the remaining omelet.
