Egg & Potato Omelette :
8 egg whites 1 large potato cut into wedges salt & pepper nonstick cooking spray 2 tbsp olive oil light feta cheese (as much as your diet allows)
Lightly grease the potatoes with a little olive oil. Place potato wedges in the oven on a non-stick pad. Bake in a 400 degree oven until lightly brown.
Whisk the egg whites, salt & pepper till light.
Spray a non-stick pan with cooking spray and heat. Add the cooked potatoes. Pour in the egg mixture and cook till almost done.
Add crumbled feta and cook the remainder of the way.
Serve immediately.
