My latest favorite!! I know this sounds odd but you've got to give it a try.
1 cauliflower 1 pinch nutmeg 1 tbs. water 1/2 cup non-fat or low-fat shredded cheese (I like mozzarella) 1 tbs. romano (or similar) cheese salt & pepper to taste
Break up the cauliflower into bite-size pieces. Steam the cauliflower until it is completely tender (about 15 min.) Place cauliflower in a food processor Place the cauliflower and process until it becomes like a chunky mashed potato. You may need to add the tbs. of water to assist your processor. Add the cheeses and blend again. Finally add your nutmeg, salt & pepper and give it a final mix.
You're done!
Variations: You can make this without the cheese but I would then add a potato to the mix (this will make the consistancy a little thicker). You can also add a clove of crushed garlic!
Because if its bitterness, this goes extremely well with fish (I like tilapia).

That sounds great to me..........anything with cheese sounds great at this point in my diet though!! ;D

I am not a bg fan of cauliflower. It stinks!! LITERALLY!! But I do like the cheese, maybe I will give it a shot. ;D
