Found this on Mayhem posted by a member named "Modernimage"............his words below:
I have been using these when im on the road when i need to intake carb because they are easy to take with you.
In a bowl mix
8 oz sweet potato( I first bake them in the oven the mash them into like mash potatoes.
2 cups dry oat meal
1 cup egg whites 1 whole egg 1 tbl sp of vanilla Cinniamon 1/4 cup splend
Get a muffin pan with 12 and spray with pam Cook at 350 for 30 minutes
And Eat mmmmmmmmmm... I have been using this while dieting for my show, it feels like im eating bad
Comes out to 18 carbs per muffin.

Randy,you`re right,I thought it sounded great,but Devils Food cake sounds great,not a sweet potatoes/oatmeal combo made into a muffin....................I must be dieting!! ;D

I usually make up a couple of batches and freeze up the extra. I ran out of muffin tins the last time so I spread the dough into a pie pan and baked it off. A nice treat when dieting.
