Spicy crunchy veggies 4 servings
2 Cups fresh broccoli florets 2 oz reduced fat shredded cheddar cheese 1/4 cup fresh cauliflowerets 1/4 julienned carrot 2 TBSP finely chopped red pepper 1 small jalapeno pepper, seeded and chopped 2 TBSP fat free plain yogurt 2 TBSP reduced fat mayo 1/2 tsp salt-free spicy seasoning blend (Mrs Dash brand) 1 TBSP slivered almonds, toasted
In a large bowl, combine the first 6 ingredients. In a small bowl combine the yogurt, mayo and seasoning blend. Stir into vegetables and cheese. Cover and refrigerate for at least one hr. Just before serving sprinkle with almonds.
3/4 cup equals: 87 calories, 5gm fat (2gm saturated fat), 7gm carbs, 2gm fiber, 6gm protein
