1-1/2 cups reduced fat margarine-softened 1/2 cup reduced fat peanut butter 1/3 cup sugar 1/3 cup packed brown sugar 1 egg 2 egg whites 2 cups old-fashioned oats 1-1/2 cups all purpose flour 1-1/2 tsp ground cinnamon 3/4 tsp baking SODA 1 cup (6oz) semisweet chocolate chips 3/4 English toffee bits or almond brickle chips
In a large mixing bowl, cream margarine, PB, and sugars. Beat in egg and egg whites. In another bowl, combine the oats, flour, cinnamon and baking SODA; gradually add to the creamed mixture. Stir in the choc chips and toffee bits. Drop by tablespoonfuls 2 inches apart onto baking sheets coated with nonstick cooking spray; flatten slightly. Bake at 350 degrees for 9-11 min or until golden brown. Cool for 2 min before removing from pans to a wire rack. Makes about 5 doz.
1 cookie=82 calories, 4g fat (1g saturated fat), 9mg cholesterol, 59mg sodium, 11g carbs, 1g fiber, 2g protein.

I know you are just kidding!!! I love to cook and bake healthy. So when you guys are out of "contest" mode, my recipes, which there are more healthy, low carb, low fat ones to come, are here to try!!!! Besides I'll be hating life soon enough!

god those sound good..what if you changed the sugar to splenda and the brown sugar to splenda brown sugar. What would that do to the nutrition totals? any ideas.....I have to get my wifey to make these for me......

The changes will lower the calories, fat(by a bit), and possibly the carbs. If you like I can re-figure totals when I get a chance!!!!

Here ya go Hoop: I have not tried these with Splenda substitutes: For the 1/3 cup of sugar, replace with a little less than 1/4 cup Splenda for baking. for the 1/3 cup brown sugar, replace with a little less than 1/4 cup Splenda Brown sugar blend. They may not turn out, obviously as well as the regular, but heck give it a try. Nutritional value would be about 53 calories, about 5 gms carbs. If it doesn't work....let me know and I will mess around with it myself.
