Grilled Steak Tacos:
This recipe serves: 4 Ingredients:
1 teaspoon mild chili powder 1/2 teaspoon sugar 1/4 teaspoon salt 1 pound flank steak 8 flour tortillas juice of 1 lime 1 cup shredded lettuce 1 cup chopped fresh tomatoes 1/2 cup chopped onion 1/2 avocado, peeled and sliced 1/2 cup salsa 1/2 cup low-fat sour cream
Cooking Instructions:
1. In a small bowl, combine the chili powder, sugar and salt. Sprinkle this mixture onto both sides of the steak. (This can be done a day in advance and stored in the refrigerator.)
2. Preheat grill to medium high.
3. Place the steak on the hot grill and cook for about 7 minutes on each side for medium doneness.
4. Wrap the tortillas in foil and warm them on the grill for a few minutes.
5. Remove the steak from the grill, place it on a cutting board and squeeze the lime juice over it. Allow the steak to rest for 5 minutes before slicing it on the bias.
6. Have everyone build their own tacos with the warm tortillas, sliced steak, lettuce, tomato, onions, avocado, salsa and nonfat sour cream.
