3 egg whites 1 whole egg .5 can tuna/salmon 150g mashed sweet potato half diced bell pepper(red/orange) seasoning of choice Mix together and pan fry for 5-7 mins,turning once this is yummy,one of my all time favorites and extremely filling!

Looks delicious Beckie, but I think we might have another word for your Noo Zilland thread, LOL. To us "mericans" a pancake is made with milk eggs and flour, plus anything you might like to add like cinnamon or vanilla extract, and then you "bury" it with butter and maple syrup. It's a traditional Sunday breakfast kind of thing. Somehow, I can't imagine the salmon/tuna and bell pepper going to well with the syrup, lol. By any chance could your "pancake" be what us "mericans" would call an "omlette? ??" Breakin' down the language barrier, Vin.
