Just got this from a buddy at the gym. Just tried it and had to share it.
1 cup uncooked oatmeal 8-10 egg whites 2 scoops protein powder 1/2 cup applesauce or chopped apple 2 tbs organic honey and/or stevia 1 sweet potato cinnamon to taste organic coconut oil
Bake the sweet potato at 370 degrees until it's soft. Allow to cool. Peel off the skin and mash along with the cinnamon. In another bowl, mix all of the other ingredients except for the coconut oil. Add the mashed sweet potato and mix thoroughly.
Lightly grease a muffin tray with the coconut oil. Drop in your mixture until the cups are about 2/3 full. Bake at 370 degrees for approx. 25 minutes. This makes about 12 muffins. Muffins can last up to one week in fridge but can also be frozen and thawed as needed.
Modifications I've made: The original recipe called for olive oil. I find this to be too strong and used organic coconut oil instead. Next, instead of the honey, I substituted with Stevia. Also, rather than applesauce, I used 1 microwaved 1 organic apple and 1 organic pear. Mashed them together and added them to the mixture. Finally, I added 2 scoops of protein powder just to up the protein content.
I actually made 4 times the mixture. My totals for the entire batch were: Protein: 292 g Carbs: 251 g Fat: We don't count to stinkin Fat!!! Actually, it's very low.

Hey Terry, these sound yummy!!! Can you send me a batch when I'm in the hospital recouping from my surgery? UGH - hospital food. Thank goodness most hospitals have a fridge that patients can use, I'll have to have Troy or my sister bring in my food everyday and will make sure I have a good supply of protein powder with me just in case.
