Well I tried a new recipe for the old standby. I used to simply use tuna and egg whites and seasoning. Well now that I taking in more carbs I decided to add some oats to the mix. I don't really care for oatmeal by itself and have a bowl of oatmeal and a tuna patty just didn't fit the bill so I tried this.
1 - I tried 1/2 cup oatmeal and 1/2 cup very hot water,mixed it and added 2 cans of tuna and 2 egg whites. This was then blended with my trusty hand mixer. IT was OK but a bit pasty when cooked and the moisture content was just too high from the water.
So I tried method #2
2 - This resulted in a much better texture and even slightly better flavor. 3/4 cup dry oats, 2 cans of tuna, 2 whole eggs + seasoning. This was also mixed with the hand blender a splash of water can be added if the eggs don't give it enough moisture to hold the contents together. The result was very hearty and flavorful patty with just the right balance of carbs and protein that I was looking for.
