Ah, the desperate creativity of a pre-contest diet. This is one of my lunch creations:
Chopped onion (about 1/4 cup or less) Frozen green beans (1 cup) Egg substitute (as much as your protein requirements are) Brown Rice (1/2 cup cooked) Low-sodium soy sauce
Spray a pan with Pam, grill the onion, add the green beans. Once those are cooked, add the rice and a splash of soy sauce. Let the sauce cook off a little and add the egg substitute. Scramble it up, top with more soy sauce if you like things as salty as I do!
If I need more protein, I will add chicken or (pre-cooked) lean ground turkey, and use less egg sub.
