Found this recipe at my co-op tonight while getting groceris. Whipped it up in a few minutes. Delicious!
Mexican Quinoa With Pepitas and Cilantro
1 cup cooked quinoa
1/2 cup pepitas (roasted)
1 cup cilantro leaves, washed, dried
2 cloves chopped garlic
1/2 small jalapeño chili, seeded, chopped
1/2 tsp salt
1 tsp ground cumin
2 tbsp olive oil
1 tsp lime juice
1 red bell pepper, finely chopped
2 green onions, thinly sliced
In medium pot, bring water to boil over high heat.
After cooking quinoa, add everything else and stir in
Stir pepita mixture, bell pepper and onions into warm quinoa. Stir well.
Makes 5 cups (4 main servings).
At the co--op they served it as a salsa with corn chips- but I'll just eat it with my chicken or beef.
