When i first learned about hammer curls, I did them like I would do db curls except with a "neutral grip (hammer grip)"
Later on, I've adapted to doing it across the body because I've seen many others do it including Charles Glass.
In regular Close grip bb curls, it would put more emphasis on the Long head of the bicep.
If doing Hammer curls across the body is simulating Close grip curls but with a hammer grip, how does it affect the muscle simulation differently? What is it more emphasis on?
As far as I know, when your hand is in a neutral or pronated position it would put more load on Brachialis and Brachioradialis

You are correct! I think some of these guys are just over analyzing everything to make it look more complex than it really is. Just use exercises that you can do in reasonably good form, that feel right for your structure.
