Pumping Iron is extremely good as a book and DVD. Also have an autographed copy of Dave's book, and it is awe inspiring. Also like Jay Cutler's CEO Muscle. Tough call for me to choose among those three.
Like Dorian's DVD, and also liked Jay's Ripped to Shreds and Markus Ruhl's Made in Germany. Inspirational and well filmed.

Books: Both of the Bob Paris books- Beyond Built and Flawless. No matter how anyone feels about the dudes lifestyle, the guy knows bodybuildind and explain the exercises in a way that you know how to do them with perfect form. Book also explains how bodybuilding is a lifestyle and being the best you can be in all aspects.
Video: A crappy quality VHS video I have "Shaun Davis, Dinosaur in Training"-- the Brits are TOUGH trainers. Very motivating.

Book: Freestyle Bodybuilding (published late '80s, I believe); has an amazing pic of Lee Labrada on the cover. Covers both the physical and mental aspects of training.
Video: Dugdale's "Driven," and Dorian's
