Chalk it up as a cultural thing Paisa, LOL. Seriously, if you want to exercise a little bit of "damage control," always eat a big salad before the pasta dish. The fiber in the salad will help to lower the G.I. index of the pasta, plus it should fill you up so that you eat less pasta. You are doing right by adding beef or chicken to the pasta, the protein will also help to lower the G.I. Index of the meal. Try getting in atleast 30 grams of "real" protein with the meat or chicken. It will combine with the incomplete protein of the pasta, so in the end you are getting even more than the 30 grams!!!!!!!!!!! Bon Natale, Vin.

Timings everything. If you want a heavy carb/pasta meal try to time it before a workout (TONS of energy), or Post Workout. I do the same thing for sweets/cakes, etc. I eat them right after a workout because that's when my metabolism is really kick started.
