Rice with Mushrooms:
Makes: 8 servings
Ingredients:
2 cups chicken stock 2 teaspoons parsley flakes 2 teaspoons onion, minced 1/2 teaspoon oregano 2 cups instant rice, uncooked 1 tablespoon non/lowfat margarine 4 ounce can mushrooms, sliced Directions:
Bring stock, parsley, onion and oregano to a boil in a saucepan. Stir in remaining ingredients. Cover and remove from heat, let stand 5 minutes. Mix and serve. Nutritional Information:

Sounds great, Tim. My cousin has a very similar dish that she makes with chicken breast pieces added.
And this would also be a great side dish with chicken, turkey or fish.
