Green Beans With Cashews:
1 pound green beans, trimmed 2 tablespoons olive oil 1/2 cup slivered red onions 1/3 cup raw cashews 1/4 teaspoon salt 1/4 teaspoon black pepper Few sprigs fresh parsley, chopped
Blanch green beans in a pot of boiling water for 5 minutes. Drain and immediately refresh in a bowl of ice-cold water. Drain and set aside.
In a large frying pan heat olive oil over medium-high heat for 30 seconds. Add onions, cashews, salt and pepper and stir-fry for 2 to 3 minutes, until the onions are softened.
Add cooked green beans, raise heat to high, and stir-fry actively for 2 to 3 minutes, until the beans feel hot to the touch. (Take care that you don't burn any cashews in the process.) Transfer to a serving plate and garnish with chopped parsley. Serve immediately. Makes 4 servings.

Going on the top of my "to try" list. A takeout place near me makes a great steamed chicken and cashew plate, and I ask them not to add MSG or salt.
I'll add chicken to this recipe and it should be awesome. Thanks as always, Tim.

Sounds yummy. With all of these great recipes.... I really need to try some of this stuff when I can mix up my diet a little. Ok.... Now I am hungry. Time for some canned tuna.
