Lobster Roll:
Ingredients: 3/4 cup plain lowfat yogurt 1/4 cup mayonnaise 3/4 teaspoon chopped fresh tarragon 1 pound cooked lobster meat 1 cup celery, diced small 6 top-split hot dog rolls Salt & pepper to taste
Directions: Cut the lobster meat into 1/2-inch pieces and place them in a mixing bowl. Add the yogurt, mayonnaise, celery and tarragon. Toss well. Toast hot dog rolls. Using a spoon, gently place the chunks of lobster in the rolls and serve immediately. Be sure to refrigerate any remaining lobster filling.
Yields: 6 servings
