I thought of this to match my diet. its the stuffed bell pepper. Mainly i want to modify my Tuna as all of you know canned tuna on a plate isn't really platable even with greens on the side. So i came up with this.
Ingredients:
Preferably Red bell pepper for vitamin c
Any color will do.
6oz of it
1 can of chunk light tuna drained
4oz of Cremini Mushroom sliced thinly (like for a pizza)
1oz of Scallion
Directions:
There are two ways you can do this that i can think of.
1 way is to cut open the top of your bell pepper....and empty the inside.
Another way is to cut the bell pepper in half and empty the inside. Grill the Half piece of bell until desired grillness.
Heat non stick fry pan. Spray with Pam non stick spray. Chop 1oz of scallions and sate for 30sec. Dump in Chopped Cremini. Sate for 1min. Stir. Dump in canned tuna drained. Stir with spatula until it is all chunked up like ground beef. Sate until desired brown ness.
Scoop amount wanted into the hollowed bellpepper. If you still have the top cover....garnish it as a little hat for it hehe.
If you cut it in half....take the hot grilled bell pepper and scoop the sated tuna/scallion/mushrooms on one half of the bell pepper...and do the same for the other.
Garnish however you like. Spice it up with Black pepper or any spice you like. Top with graded cheese and let it melt on top!! ;D
You can also use Lean ground Turkey or Ground Beef if you like. But i think this recipe is best with Tuna as Tuna in a can is very hard to make platable....hope you enjoy.
