In any baking, I substitute ground oats (use a coffee bean grinder) for flour. Also, when oil is called for (if it's not for "greasing" the pan), typically it's only function is moisture... you can substitute an equal amount of unsweetened applesauce for the oil. No notable difference in moisture, but adds a nice sweeter flavor.
Ingredients: - 3/4 cup cornmeal - 1-1/4 cup skim milk - 1 cup oatmeal flour - 1/3 cup Splenda - 1/4 brown Sugar Twin (optional) - 1 tblspn baking powder - 1/2 tspn salt or No-salt (optional) - 1 egg - 1/4 cup unsweetened applesauce - 1/8 cup sugar free coffee syrup (optional) -- I like caramel flavor the best.
Preheat oven to 400 F
Combine cornmeal and milk in a medium bowl and let stand for 10 minutes.
Combine dry ingredients in a large bowl and mix well.
Add egg and applesauce to cornmeal/milk mixture and mix well. Add liquid ingredients to dry ingredients and stir just until mixed.
Pour into muffin tins about 2/3 full (makes 12). Consider using muffin paper as it sticks fairly easily to the tins.
Bake for 15 to 20 minutes.
I've also tried this in a bread (or meatloaf) tin. You need almost double the time that way, so watch it carefully if you try this.
