This is a wicked recipe and I hope you all enjoy it as much as I do, when you are craving and need something but would never resort to all the junk (like Oreo's..Randy) out there. ha ha
Ingredients:
-2 small packages of ultra-low fat cream cheese
-1/2 cup dry curd cottage cheese (sometimes I add 1 whole cup but then you need to add more sweetner and more egg whites)
-1-2 scoops Vanilla Protein Powder
- Baking Splenda equivalent of 1/2 cup sugar (can't remember exactly how much splenda this is but I always taste test before putting it in the oven so you can add more splenda if needed)
-1 tbsp Vanilla extract
-2 Eggs or (3-4 Egg whites)
-1/2 cup canned pumpkin (pure pumpkin)
-1/2 tsp cinnamon
-1/8 tsp nutmeg
-1/8 tsp ground cloves
*First add your cottage cheese and eggs/whites in the blender blend the dry curd cottage cheese until it is smooth then add your protein powder, cream cheese and the rest of the ingredients.
*You can bake this in a regular 9x12 glass dish (spray Pam on the bottom) this way you can cut them into cheescake squares or you can bake in a regular cheescake pan (again remember to spray with Pam)
*I usually bake for about 40 minutes at 350.C but you should watch it the first time you make it as it may only take 30 minutes.
**There are so many thing you can do to experiment with this recipe. ie: Add more pumpkin, add more protein(whey powder), add a little fat free sour cream (this makes it really rich tasting)....as you can see I have experimented with this recipe a few times, lol
Even my non-bodybuilding friends love my cheesecakes.
*To top it off...if you are really craving a treat, you can add a dollop of Fat free Cool-whip or some sort of whipped topping and it almost tastes like pumpkin pie/cheesecake, mmmmmmmmmmmm
