Whipped it up in a few minutes. Delicious!Mexican Quinoa With Pepitas and Cilantro1 cup cooked quinoa1/2 cup pepitas (roasted) 1 cup cilantro leaves, washed, dried2 cloves chopped garlic1/2 small jalapeño chili, seeded, chopped1/2 tsp salt1 tsp ground cumin2 tbsp olive oil1 tsp lime juice1 red bell pepper, finely chopped2 green onions, thinly slicedIn medium pot, bring water to boil over high heat. After cooking quinoa, add everything else and stir inStir pepita mixture, bell pepper and onions into warm quinoa. Stir well.Makes 5 cups (4 main servings).At the co--op they served it as a salsa with corn chips- but I'll just eat it with my chicken or beef.TASTY!
